Exploring The Art Of Plat Du Jour With Chloe Vichot, founder of Ancolie
Chloe Vichot, one of the city’s rising entrepreneurs and food artisans, takes a plunge into the unknown by introducing a wholesome and balanced dish-of-the-day.
Ancolie aims to provide a healthy and rich, ready-made lunch option for individuals who live on New York time. The meals are prepared in glass jars everyday, which promotes an environmentally friendly alternative to conventional fast casual dining.
Chloe and her husband Sebastian live in a beautiful one bedroom apartment, located on a tree lined street in West Chelsea. The couple completely redesigned the space to cater to their unique lifestyle and taste
They were kind enough to invite us into their home and speak with us about their space as well as the process of starting a new business in New York City.
What are some of your favorite furniture stores to shop at?
We like unique pieces that can’t be easily found. We have collected all of our furniture from different places around the world. It’s all about falling in love with a piece of furniture and actually looking for a piece, which fits a need. It’s like love at first sight. Everything in this apartment has it’s own story. We like to own pieces that have some character.
What is your favorite piece of furniture in your home?
Our favorite piece is this box which is now our coffee table. Sebastian purchased the chest in Chile before he moved to New York; initially he used it to house his turn tables. It was later used to ship belongings from Chile to New York. The chest has traveled the world with us. It was supposed to be a temporary alternative to a coffee table but we never found exactly what we were looking for, so it has been here ever since we moved. It was actually the first piece of furniture Sebastian bought, even before buying a suitcase.
What do you like most about your home?
Light was one of the most important things we were looking for while house hunting. Our apartment is on the top floor of a walk-up with unobstructed views. There is a school directly in-front of our building, which is great because it almost guarantees that they wont build a high-rise to obstruct our view. Our apartment also has great flow, we tore down a few walls to combine the kitchen with the rest of the living space.
How did you come up with the idea of Ancolie?
We want to change the way people eat. We want to have people respect the environment and the planet. The name Ancolie actually comes from a flower. We got married on a ski slope in the Alps called “La Face” and on the slope there were these rare and famous flowers, Ancolie. We decided to use the name to help promote the idea behind preserving the environment. Our company is very environmentally friendly, we use recycled glass jars to serve all our meals, so it all just made sense.
What do you like most about living in Chelsea?
Chelsea is a very central location, I can easily walk anywhere in the city. I can be in Midtown in two seconds. It’s also a neighborhood were a lot of new concepts are being tested. Last year I heard that Chelsea is now being called the Fitness District. There are many new types of restaurants opening in the area. There are an endless amount of options in Chelsea, if you want to go boxing you can, if you want to try a new cuisine you can. As an entrepreneur, living in Chelsea is very motivating and inspiring. I also love how quiet the neighborhood is, there are small streets and it really feels like a neighborhood.
